Low Sugar: the functional vermouth driving the circular economy

Miró, together with the technological center Eurecat, has carried out the project “LOWSUGAR: Applied research on a new type of ‘low sugar’ vermouth with natural sugars from food waste” (PAG-020100-2023-215), an initiative funded by the Ministry of Industry, Commerce and Tourism through the Next Generation EU program, within the framework of the first call of the PERTE Agroalimentario.

The project focuses on health and sustainability through the use of valuable compounds extracted from plant-based food waste. This has enabled the creation of a low-sugar vermouth that is not only healthier but also better for the planet, thanks to the reuse of plant-based food waste.

Through a strategy based on scientific knowledge and applied research, pilot-scale progress has been made in the formulation and development of a functional low-sugar vermouth, using winemaking by-products as a source of bioactive compounds. The results obtained from the project lay the foundation for industrial scaling, contributing to the valorization of agro-food by-products and the development of functional foods aligned with the principles of sustainability and the circular economy.
