This has enabled the creation of a <strong data-start=\"2212\" data-end=\"2234\">low-sugar vermouth<\/strong> that is <strong data-start=\"2243\" data-end=\"2296\">not only healthier but also better for the planet<\/strong>, thanks to the reuse of plant-based food waste.<\/p>\n<p data-start=\"2348\" data-end=\"2874\">Through a strategy based on <strong data-start=\"2376\" data-end=\"2421\">scientific knowledge and applied research<\/strong>, pilot-scale progress has been made in the formulation and development of a <strong data-start=\"2498\" data-end=\"2531\">functional low-sugar vermouth<\/strong>, using <strong data-start=\"2539\" data-end=\"2565\">winemaking by-products<\/strong> as a source of <strong data-start=\"2581\" data-end=\"2604\">bioactive compounds<\/strong>.
